Herbal teas make terrific ice lollies. We especially like this mint version with fresh peach, but you could also try berry flavoured tea and add fresh berries. Lower in sugar than shop bought, good for kids and also grown ups.
Step 1
Boil the sugar with 35ml water until the sugar is dissolved. Cool the syrup
Step 2
Put 250ml of water into a kettle and bring to the boil. Pour over the tea bag and allow to steep for about 5 minutes. Remove the tea bag and cool the tea completely.
Step 3
Squeeze the juice of the lemon and add enough of the syrup to taste.
Step 4
Divide the peach slices amongst the ice lolly moulds and push one mint leaf into each mould.
Step 5
Pour the cold tea mix into the moulds and seal.
Step 6
Freeze for at least 6 hours until fully frozen.
You can replace the any of the following fruit in season
• All stone fruit; apricots, nectarines, cherries, plums
• Melon
• All berries
• Mango
